Easy recipes for breakfast with mom

Mothers hold a special place in our hearts and in the community. Whether she’s prepping for meals, presenting to clients, cheering from the sidelines, or budgeting for the fiscal year – moms are an unstoppable source of strength, support, and love.
With Mother’s Day just a couple days away, you may be wondering how any gift could possibly be good enough to show your appreciation for the leading lady in your life. While it may sound cliché, there are a few gifts that never goes out of style – the gift of time, love, and breakfast in bed.
This weekend, spend quality time cooking together or cook for mom! Either way, these recipes are sure to impress when you fill your mother’s home with the sweet aroma of fresh French Apple Pancake, or catch up over a refreshingly sweet Blueberry Lemon Yogurt Parfait. And don’t worry – we’ve got you covered with the simple recipes below!
Banana Caramel Custards

French Apple Pancake

Yield: 8 servings



    1 cup Pancake Mix
    ¾ cup milk
    2 tablespoons vegetable oil, butter or pan spray
    2 apples, peeled, cored and diced (or 1 can any fruit, drained)
    ¼ cup honey, pancake syrup, corn syrup (or any liquid sweetener)

    Optional Ingredients

    Add 1 teaspoon combined of any of the following spices: cinnamon, nutmeg, all spice, pumpkin pie spice, ground cardamom
    Add ¼ cup chopped nuts and/or dried fruit to fruit right before pouring the pancake mix over it.



  1. In a medium bowl, whisk together pancake mix and milk. Set aside.

  3. In a medium saute pan, add oil over medium heat. Add fruit and saute until the fruit begin to soften, about 5 minutes. Pour honey or pancake syrup over fruit and saute an addition 3-4 minutes.

  5. Pour pancake mix over the fruit and gently combine.

  7. Put in oven for 10 minutes or until golden brown and puffed.

  9. Turn out on to a plate and cut into pie wedges. Serve with whipped cream or vanilla ice cream if desired.

Blueberry Lemon Yogurt Partfait

Yield: 6 servings


    32 ounces Vanilla Greek yogurt
    2 small lemons, zested and juiced
    1 cup fresh blueberries
    ¼ cup sliced almonds



  1. In a medium bowl, whisk together yogurt, lemon zest, and lemon juice.

  3. Add ½ cup yogurt to a parfait dish or small bowl. Top with ¼ cup blueberries, then another ½ cup of yogurt. Sprinkle with 1 Tablespoon sliced almonds.

  5. Repeat with three more parfait glasses. Serve immediately or refrigerate.
